"Family Favorite" Low Carb Pizza

My family and I have tried all of the many different low carb/keto friendly pizza crusts over the years.  And we like all of them for different reasons.  After all, one of the best strategies I have found to make this lifestyle a sustainable one is finding tasty low carb replacements for my favorite carby foods.  And one of the foods that people are convinced they'll never be able to find an acceptable replacement for when doing a carb conscious lifestyle is pizza.  So, I say, "try them all"!  It's the only way that you'll find out which one that your family likes the best.  And this one is my husbands favorite.  So easy that he can whip up the crust in just a few minutes.  Oh, and a quick tip.  If you want to lower the carb count even further you can use Alfredo sauce or pesto instead of pizza sauce. 




Place all ingredients for crust in a bowl.


Mix all ingredients together with your hands until it easily stays together in a ball.

Place a piece of parchment paper on top of a 9" x 13" cookie sheet pan, place the dough on top right in the middle, then place another piece of parchment paper on top of the dough and begin spreading out the dough.  I absolutely love this nifty tool for this job.  It's a Baker's Roll. If you have any holes or thin spots don't worry.  When it bakes in the oven it will spread out, become flat, and fill in any imperfections.  But as you are baking do take a look at it.  If it forms any bubbles just take a sharp knife and poke it.  It will flatten right out.  This dough will need a double bake.  You first bake the crust.  Remove.  Add the toppings then bake again.  Look below for the recipe and instructions.

Low Carb Pizza Crust

ingredients:

  • CRUST:
  • 2 c Low Moisture Part Skim Mozzarella Cheese, shredded
  • 1 c Parmesan Cheese, grated
  • 2 Extra large Eggs
  • 1/2 tsp Garlic Powder
  • TOPPINGS:
  • 1/3  c No Sugar Added Pizza Sauce
  • 2 tsp Dried Italian Seasoning
  • 1/2 c Italian 3 Cheese, Shredded
  • 2 oz Mini Pepperoni
  • OPTIONAL TOPPINGS
  • 3/4 c Cooked and Crumbled Italian Sausage
  • 1/3 c Onions, diced
  • 1/3 c Green Bell Peppers, diced

How to cook Family Favorite Low Carb Pizza

  1. Preheat oven to 350 degrees. 
  2. Place all crust ingredients in a bowl and with hand or fork stir together until well incorporated .  You should be able to easily form it into the shape of a ball.
  3. On a 9" x 13" cookie sheet cover with a piece of parchment paper.  Place the dough on top and in the middle of the parchment.  Place another piece of parchment on top and flatten out to cover the whole baking sheet.  Then slowly remove the top piece of parchment and discard.  
  4. Bake crust for approximately 20 minutes.  Half way through check it to see if any bubbles have formed.  If so, just poke with the tip of a sharp knife to deflate,  then continue baking.
  5. Remove from oven and top with sauce then sprinkle on dried Italian seasonings, cheese and any other of your favorite toppings . Place back into the oven and bake until the pepperoni has cooked . We like ours crunchy around the edges.  It takes about 10 more minutes in the oven.  Remove from oven, cut, and serve. 

NOTES:

Nutritional info I have provided doesn't include the "optional toppings". Any veggies you add to your toppings should be a small dice so that they bake evenly in oven. If you like them bigger then you'll want to sauté them before adding to your pizza.
